3 Quick Tips For Getting Dinner Ready In A Flash

*Prepare certain vegetables beforehand -Whether you’re about to embark on preparing a Holiday Dinner or it’s just you and the kids,  if you take the time to partially prepare your meal before-hand you will still be able to eat healthy without wasting time. For instance, I always peel and slice my carrots, potatoes or yams before meal time. It could even be the night before after my son has gone to bed.  I then put them in a bowl of water in the fridge to keep them from discoloring.  When the next day rolls around all I have to do is drain and then cook them.

*Spend one day cooking several meals ahead of time – My husband is from Norway. Being so close to Sweden, he knows a good Swedish meatball, so buying frozen is out of the question. Not to mention, once you’ve perfected a recipe you’ll never want frozen again.  Things like meatballs take quite a bit of time to make.  I will usually take one day of the week and spend several hours cooking.  I refrigerate the meatballs for use that night or even the next day (They always taste better the next day). I freeze the rest so that next time they’re ready to go. When I thaw them I just use a box of stock to add moisture that may have been lost.

You can do the same thing with meatloaf. I use very small bread pans and make several meat loaves out of 1 batch of meat/mix.  We are only a family of 3.  2 adults, 1 child so a meatloaf this size is perfect for us. There are usually very little extras left over, which is perfect for me because if there is there’s a chance I’ll eat it later on, ruining my diet.  Of course there are several other dinners you could do this with as well.. lasagna, manicotti, spaghetti sauce. You don’t always have to freeze it, as some things will last several days before re-heating.

*Crockpot Dinners – Of course just about every mom probably already knows this.  I never actually owned a crock pot until my in-laws bought me one on their visit here. Let me tell you.. I’ve used it plenty since then.  Corned beef and cabbage, beef stew, soups, pork roast, pot roast, chili, pulled pork! I’m always on the look-out for great crock pot recipes. Just turn it on in the morning and forget about it until dinner time.  And if you’ve already prepared your vegetables the night before, you have plenty of time to throw everything in before heading out the door in the morning.
